  1. Preheat oven to 400 degrees. Place cauliflower and onion out onto a cookie sheet and drizzle with 1 Tablespoon of olive oil. Using hands or a spoon gently toss to coat cauliflower and onion. Once coated, place into the oven for 30-35 minutes or until fork tender.
  2. Cut top 1/2" off of the top of garlic bulb. Place onto a piece of tinfoil that is large enough to wrap it in. Drizzle remaining Tablespoon of olive oil over the top. Sprinkle with salt and close foil upward around garlic into an upside down cone shape. Place into the oven next to the cauliflower and roast for 20-25 minutes or until fork tender.
  3. Remove cauliflower, onion and garlic from the oven once ready. Place cauliflower and onion into a blender, followed by 2-4 cloves of roasted garlic - depending upon how "garlic-y" you prefer. Next add vegetable broth, butter, cumin, salt and pepper and blend together well. Once blended remove from the blender and place into a medium pot over medium high heat. Add in cheddar cheese and stir until well melted and incorporated. Once hot, serve with a dollop of sour cream , bacon bits, chopped green onions, or all three.
