Cauliflower is back at the market! It’s high in Vitamin C and has a fair amount of Vitamins B + K, and fiber. It can be roasted, fried, sautéed, pickled and eaten raw. Here is a fairly easy recipe for Gruyère Cheese Cauliflower Gratin.

  1. Use butter to grease two serving bowls and set aside. Place chopped cauliflower into a medium sized bowl and cover with water. Place into the microwave for 5-6 minutes and cook until tender. Once tender drain off water and set aside.
  2. In a small pan add milk and cornstarch and whisk together well. Once well combined place over medium high heat. Add Gruyère cheese, thyme, salt and pepper and stir together until well combined and cheese is melted. Once melted let cook for one minute then remove from heat. Place cauliflower into prepared dishes and pour cheese sauce over the top and turn on boiler.
  3. In a small bowl add panko bread crumbs and olive oil and stir together well. Scoop Panko mixture out evenly onto the tops of the cauliflower mixture. place into the boiler and let cook for 5-6 minutes or until tops are golden. Once golden remove from the heat and serve.
