We are in the hot zone now. Days spent by the pool (or some form of cool water) and nights spent trying to not turn the oven on in the house. This is one of my favorite summer fresh recipes to enjoy during such times.

  1. Place chopped cucumbers, tomatoes and red onions into a large bowl and top with fresh dill.
  2. In a small bowl whisk together apple cider vinegar, olive oil, salt and pepper. Pour mixture over the cucumber salad and toss together. Serve salad right away or let in marinade in the refrigerator for up to 4 hours before serving.
