Did you know you can but fresh fish at the Lone Star Farmers Market? Yvonne Cavazos of Concha’s not only makes some of the best salsa’s around she also sells fresh-off-the-boat fish such as Red Snapper, Flounder, Grouper and Gulf Shrimp to name a few. 1. How long have you been making your signature salsas and how did you get started in the salsa & fish business? 

When I was young my great Grandma used to make this salsa in a Mexican style mortar and pestle, it was so good that we would just devour all of it in one sitting. About 4 years ago I decided I was going to bottle it and keep it as natural as possible like my great Grandma did. I always disliked store bought salsa because it doesn’t taste the same at all. Concha’s salsa is the way salsa should taste. 

You know the best thing to eat is really fresh tasting fish and I find that at Katie’s seafood  in Galveston. I bring to the market whole and fillets of red snapper, flounder, grouper, Boston sea scallops and shrimp. Katie’s seafood is known for the freshest and most honest fillet cuts. I bring in seafood for the markets arriving late Friday to Saturday. Mornings for freshest wild caught for out market shoppers.

2. What were you doing before launching your company?

Before I Started this salsa business I was in pharmaceutical sales on the psychiatric side for many years and decided to leave that business. 

3. What’s the biggest thing that you’ve learned along the way since launching your salsa and seafood business? 

The biggest thing I’ve learned about this whole launch is “if you want to do something right, do it yourself.” I am the one with the vision to make this salsa the #1 salsa in the nation and I will make it happen.  It is a great learning experience to appreciate awesome tasting fish. 

4. What’s the best thing to know about your fish and seafood that sets you apart from the rest? 

The best thing that sets me apart is making the freshest, tastiest salsa ever created and really putting lots of love in every pot. Try grilling the fresh fish and marinating it with Concha’s Salsa.

5. What do you love most about the Lone Star Farmers Market?  

The one thing I love the most are the customers and the vendors, everyone them are wonderful people.
