Sautéed Okra with Corn Bread

Such a fun day at the market Sunday! Here is this dish that we prepared: Sautéed Okra with Corn Bread

Okra from Engel Farms, Onions fromWinfield Farm, Micro Arugula from Bella Verdi and tender corn bread from Daisy Bakery then topped off with a crumbling of Cotija cheese –– a little bit of modern southern goodness. Did I mention it’s vegetarian and gluten free? This could be served as an appetizer or a main dish, you decide but dig in quick before it’s gone. Thank you to all that stopped by to say hello and if you weren’t there (or in town) no worries –– now you can make the dish for your friends.

Lemon Broccoli Hummus

Beautiful florets and stalks of broccoli are all over the market now. This recipe is light, healthy, and comes together easily. Garlic Roasted Okra with Lemon Aioli

If you haven’t tried roasted okra, you really should. It give it that crispiness on the outside and tenderness on the inside similar to the fry method but without all of the added oils. Eat it plain, dip it in Ketchup, or try it with this easy lemon aioli (mayo) dipping sauce.

Hummus Stuffed Roasted Zucchini

Our farmers sure have been loving (and needing) all of this rain! More rain for them means more produce for us to enjoy.
Zucchini is a highly versatile summer squash loaded with folate, potassium and vitamin A and is low in calories and even the flowers of this plant can be eaten.
