Sautéed Okra with Corn Bread

Such a fun day at the market Sunday! Here is this dish that we prepared: Sautéed Okra with Corn Bread

Okra from Engel Farms, Onions fromWinfield Farm, Micro Arugula from Bella Verdi and tender corn bread from Daisy Bakery then topped off with a crumbling of Cotija cheese –– a little bit of modern southern goodness. Did I mention it’s vegetarian and gluten free? This could be served as an appetizer or a main dish, you decide but dig in quick before it’s gone. Thank you to all that stopped by to say hello and if you weren’t there (or in town) no worries –– now you can make the dish for your friends.

Minted Peach and Melon Salad

Things are really heating up out there and that means less time in the kitchen. This is one of my favorite salads to make during these hot summer days. Fresh and juicy melons combined with sweet ripe peaches and salty cheese keep things light and cool at the lunch or dinner table. Serve this as is or add some grilled chicken or shrimp to it for a complete meal.

Garlic Roasted Okra with Lemon Aioli

If you haven’t tried roasted okra, you really should. It give it that crispiness on the outside and tenderness on the inside similar to the fry method but without all of the added oils. Eat it plain, dip it in Ketchup, or try it with this easy lemon aioli (mayo) dipping sauce.

Who says kids get to have all of the summer goodies? Icy cold watermelon paired with refreshing mint, a tang of lime & some rum make for some delicious adult summer fun. Fresh Texas watermelons are a great way to keep your cool this season and are now available at the farmers market.
